2 x Tbsp Butter
1 x Onion
2 x Garlic Cloves
75 ml Dry White Wine
125ml Chicken Stock
75ml Heavy Cream
Basil to garnish
Heat the butter in a pan until melted then add the chicken breasts and sear on a high heat until they are brown on both sides. Once brown, set the chicken aside.
Add the chopped onion, garlic and mushrooms to the pan and cook on a medium heat until soft.
Return the chicken to the pan, along with the white wine and chicken stock and simmer on a medium heat for 5 mins.
Add the cream and stir thoroughly, then leave to simmer for another 15 mins, turning the chicken halfway through.
After 15 mins, check that the chicken is cooked all the way through and serve. Add Basil for garnish.
